I have wonderful news. I was looking for a healing food which can prevent the onset of IBS symptoms. The method is to take this on a regular daily basis especially after food.
It is so simple to make and can keep for a few days. It is more like a drink than a food and the ingredients have been known to the Indian's a long time ago. Someone told me why Indians do not have IBS? It has everything to do with their diet. Indians have a lot of yogurt and milk in their food. This protects their stomach with good bacteria.
The recipe for this food which is call RASAM (or known as Pepper Water).
Ingredients:
1 tbsp tamarind pulp
1 clove garlic
1/2 tsp ground black pepper
1 tsp ground cumin
4 cups cold water
2 tsps salt
2 tbsps chopped fresh coriander
1 tomato - quartered
2 tsps oil
1 tsp black mustard seeds
8 sprigs curry leaves.
Method.
1. Squeeze out tamarind juice and strain
2. Put tamarind juice, garlic, pepper, cumin, tomato, cold water, salt and coriander into the saucepan and bring to boil.
3. Turn down heat and simmer for 10mins.
4. In a separate saucepan, heat the oil and fry mustard seeds and curry leaves until the leaves turn brown.
5. Add to the simmering sup and serve hot.
The whole concoction can be kept for a few days. Take about 1 glass of it (heat it up and take it hot). This can be taken anytime. I usually take if after a meal or when I feel some of the IBS symptoms starts to appear especially bloating and stomach cramps
