What is yogurt and its effects for IBS

Hi Friends

Yogurt is fermented milk by introducing an innoculating starter culture and then leaving it to ferment. The culture usually contains lactobacillus which is the good bacteria that will promote a healthy gut.

The bacteria will convert the sugar in the milk into lactic acid which makes the milk protein the curdy look and also gives the yogurt the sharp taste.

In a homemade yogurt, the milk is heated to almost boiling to kill off any contaminant. It is then left to cool before the starter culture is added which can be from a portion of the yogurt made previously. In a homemade yogurt, sometimes there may liquid floating on top of the yogurt. This is common and does not indicate that the yogurt is spoilt.

In warm weather, yogurt does not keep usually for only one or two days. In a cool climate it can be kept longer.

How do you tell if the yogurt is bad. It usually have an 'off' smell and taste. Look for moulds on the top layer.
